Grilling Fish Fillets for Memorial Day

If you want to grill some fish for Memorial day, this will fit the bill.

Cut up 2 pounds of fish steaks or fillets. Butter six 12″ squares of heavy duty aluminum foil.

Place 1 fish fillet skin side down on 1/2 of each square of foil. Sprinkle with onion powder and garlic powder.

Combine
1/4 cup melted butter
2 tablespoons lemon juice
2 teaspoons salt
1 teaspoons paprika
black or white pepper to taste

Pour this sauce evenly onto the fish. Fold over the aluminum foil and seal the edges by making double folds in the foil. Repeat for all the fillets.

Place them on the grill with the temperature around 500 degrees. If using charcoal, place about 5 or 6 inches from the coals. Close the lid.

Grill for about 8 - 10 minutes, until the fish flakes easily when you test it with a fork. If it doesn’t flake, grill a little longer.

The best fish for grilling using this method are Haddock, Trout, Perch, Swordfish and Scallops.

Grilling Hamburgers for Memorial Day

Memorial Day is one of the biggest grilling and barbecue days of the year. It seems to kick off the grill season for many. Cooking for a large crowd kind be a little stressful but here’s some tips to help you survive the day.

Hamburgers on the grill are a favorite with most people and they are pretty easy to grill. Here’s a way to season the burgers and give them an extra special taste that will get you some nice comments.

Make sure to take the burgers out of the refrigerator at least a half hour before grilling. Prepare them by first liberally spreading meat tenderizer on them. Yes - meat tenderizer. I use it to get the good flavors it adds.

Baked Beans on the Grill

Try making these baked beans on your grill. Nice in the summer so you don’t heat up the kitchen.

2 can pork & beans (16 oz cans)
1/3 cup bottled bar-b-que sauce
1/4 cup brown sugar
1/4 cup golden raisons
1/3 cup tart (granny smith) apples (optional)
1/2 cup onion, chopped
8 each bacon strips

Drain pork and beans and place into an oven-proof bowl. I like to use the aluminum throw away pansfor obvious reasons (I’m lazy)
Chop onion and apples and add to beans. Also add bbq sauce, brown sugar and raisons. Mix together and place the bacon strips on top.
Place in covered grill and grill at 350 degrees for 1 to 1 1/2 hours. If you don’t have a temperature guage, that’s medium heat.

OK - I haven’t tried Bush’s Grilled Beans yet. If they are as good as his other beans, I may be switching and simply heating them up on the side burner.

Mexican Hot Dogs?

You know. Everything is not a recipe. Sometimes when you are grilling, you just need to turn loose the creative juices.

My buddy Sean told me he was grilling hot dogs and did not have buns. So he put them in a tortilla. Added cheese to the dogs while they were on the grill, them put them in the wrap.
Now you can do what you want as far as seasoning, but I think some chili on them would be terrific! Taco sauce would make a different combination.

He grilled the tortillas for a minute on each side. That adds a nice grill flavoring. The thing is, with this you can put some good fixings on it and not sog up the bun and watch it fall in pieces.
